Around Our Town: Recipe

07/01/2011 - Pickled Beets

Boil beets until tender. Skin and cover with liquid.

Boil together for 10 minutes.

1/4 cup brown sugar

1/2 cup vinegar

1/2 cup cold water

small piece cinnamon

3 or 4 cloves

Let beets stand in this liquid for several days.

Bread and Butter Pickles

25 to 30 medium-sized cucumbers

8 large white onions

1/2 cup salt

5 cups vinegar

5 cups sugar

1 tsp allspice

1 tsp cloves

1 Tbs. tumeric

1 tsp mustard seeds

Slice cucumbers as thin as possible and chop onions.

Combine and pour salt over it; let stand 3 hours and then drain.

Put vinegar, sugar and spices into pot;let come to a boil.

Add cucumbers and onions and let heat thoroughly but do

not boil. Pack in jars while hot and seal. This vinegar-sugar-spice

base is good for any pickle.
