Rocky Mountain Ribs

There's just something special about strolling down the middle of downtown Kansas City. Sure, there are the lights and hustle bustle that are characteristic of every big city. But then there's the unique signature mixture of aromas wafting from the family barbeque businesses. Each one has its own secret recipes that make your mouth water as you try to decide which one to patronize.

Now, Casperites don't have to go clear to Kansas City to be in Kansas City! As you step from your car at Rocky Mountain Ribs, your sniffer will transport you to the barbeque metropolis before you even walk in the door. You will find yourself recognizing that special mixture of aromas that can only come from secret family recipes. And just in case you are so overwhelmed that you can't find the door, there is a large imperative invitation over the entrance commanding you to, "GET IN HERE!"

Rocky Mountain Ribs is a fairly new business in Casper having been established on November 16 of last year by co-owners Trey Warne and Jacci Chaney. Jacci had been cooking her delicious ribs and brisket for get-togethers for family and friends and people kept telling her, "You could sell these!" So, she decided to take them up on it.

Now their menu also includes all the fixings of a complete Kansas City (or Casper) barbeque. There are baked beans, potato salad, corn on the cob, coleslaw, corn muffins, cookies, and brownies. And, of course, there are menu items for which only Jacci knows the ingredients. There are two kinds of barbeque sauces- hot and mild, and also her homemade macaroni and cheese and green chili.

Rocky Mountain Ribs, like many of the urban businesses, is a family affair. Trey's mom sometimes rolls up her sleeves and gets busy serving the large group of meal time customers, as do Jacci's two daughters and her son, along with Jacci's nephew who is the assistant manager.

I ordered a brisket sandwich with the mild sauce and waited for Jacci to pull out a dab of processed meat from a warming pan. Instead, she began carving thick, tender slices from a brisket that she had cooked along with the other meats for twelve hours before I had arrived! She piled it high and served it with a smile. Needless to say, it melted in my mouth.

Visit local fairs, renaissance festivals, or the Bear Trap Summer Festival where you will find the Rocky Mountain Ribs mobile barbeque stand. You can also go to the corner of 12th Street and Beverly Tuesday through Thursday anytime from 11 to 7:30 or Friday and Saturday 11-9 and just GET IN THERE!
